Hello and happy Meatless Monday! It´s only six hours left of it here, EST in the US and in Norway most people are in dream land by now, but with everything else that was on the agenda today NOW is when I had time to sit down and make this post. Since I´m so late, I´m hoping you make Tuesday meatless as well. Kind of  win win situation;)  The weekend has been a good mixture of relaxing, sporty and fun, just the way I like it. Friday I attended an event with my girl´s at The Long View Gallery,  down town DC. “Like a Boss Party” was a blast and here´s me and “my crew” for the evening:) Rest of the weekend was filled with lot´s of relaxing time with André, checking out the Christmas atmosphere this first December weekend had to offer. Christmas trees are not what this post is about, but it is about how you can make meat free and delicious Taco. I served these bad boys at my event “Bites With A Purpose” and people seemed to love them. This recipe is more a direction, and you can improvise freely with your favorites as they can me made with virtually anything.

Ingredients for 4 tortillas: 

 Bread:   ♥I picked whole grain tortilla´s, but I have also made these with cabbage leaves as raw tortillas, and that´s delicious too.

Warm ingredients:    ♥1 tbsp vegetable oil  ♥400 gram cooked beans (100 gr per tortilla) You can use white beans and/or black beans or lentils for this as well.

Spice mix:  ♥Juice from 1/2 lime  ♥1 tbsp dried oregano  ♥tsp agave syrup  ♥1/2 tsp black pepper ♥1 tsp fine salt ♥1-2 clove of garlic, crushed in the salt ♥1 tsp Sriracha sauce  (If you don´t like to spicy food, cut down on the chili.)

Fresh cold Ingredients:  ♥2-3 tomatoes finely chopped ♥1/2 red paprika finely chopped ♥1 red or yellow onion, finely chopped  ♥2 avocados, finely sliced ♥ 2big handful of green leaves (I used spinach, but use the one you like best) ♥1/2 cucumber diced ♥Big handful of fresh coriander, roughly chopped ♥1 handful small slices of red cabbage ♥1 handful diced mango

Taco Sauce:   Use the taco sauce of your preference. I used a freshly made, organic one from Farmers Marked.

How to:

  1. Preheat oven to 160C for the tortillas.
  2. Place the fresh cold ingredients and sauce in serving bowl.
  3. Slowly fry the spice mix with 1 tbsp vegetable oil for about 2 minutes, and then add the beans, mix well and fry for another 2-3 minutes on medium heat while stirring.
  4. Place tortillas in oven and let it warm for a couple of minutes.
  5. Remove the beans from the heat and drizzle some olive oil over.
  6. Remove tortillas from oven and fill them with the beans and all the fresh ingredients.

Enjoy!! Or as the Mexicans would say “Provecho”
